Practically Perfect Picnic Salad


Grapes can be eaten in more ways than in a fruit salad or pie. This simple, summer salad combines the sweet juiciness of grapes with vegetables and beans. Add a little lemon-mustard dressing and you have a light and satisfying summer meal.

  • 1 cup seedless grapes
  • 1 can (15 ounces) small white beans, drained
  • 1/2 cup diced celery
  • 1/4 cup minced green onion
  • 2 tablespoons chopped parsley
  • lemon-mustard dressing
  • lettuce leaves

Combine all ingredients except lettuce. Mix well. Serve on lettuce leaves.

Makes 4 servings.

Lemon-Mustard Dressing

  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon-style mustard
  • 1/4 teaspoon salt and pepper

Mix well. Makes 1/4 cup.
